Bluefin tuna

The Bluefin tuna is rightfully known as the "big boss" of all tuna. In the culinary world, the semi-farmed—or better yet, "fattened"—Bluefin is the most valuable tuna in the world. Since wild Bluefin is not available year-round, this variety is farmed and fattened in several locations across Europe.

This tuna can reach a length of 450 cm and weigh nearly 700 kg. And anyone who thinks such a massive creature moves sluggishly through the water is mistaken. The Bluefin is incredibly agile, with more power than many motorized vehicles, capable of reaching speeds of up to 90 km/h.

It is a warm-blooded fish with an average body temperature of 22 degrees Celsius, always 2 degrees warmer than the surrounding seawater. The Bluefin tuna lacks a swim bladder, making it essential for the fish to remain in constant motion; otherwise, it would sink.
