The Bluefin tuna is rightfully known as the "big boss" of all tuna. In the culinary world, the semi-farmed—or more accurately, "fattened"—Bluefin is the most expensive tuna in the world. Since wild Bluefin is not available year-round, this variety is farmed and fattened in several locations across Europe.

This tuna can reach a length of 450 cm and weigh nearly 700 kg. Anyone who thinks such a massive creature moves sluggishly through the water would be mistaken. The Bluefin is highly agile, with more power than many motorized vehicles, capable of reaching speeds of up to 90 km/h.

It is a warm-blooded fish with an average body temperature of 22 degrees Celsius, always 2 degrees warmer than the surrounding seawater. The Bluefin tuna does not have a swim bladder, which means it must remain in constant motion; otherwise, it would sink.
