Yellowfin Tuna
Fishing Technique & Sustainability
The primary fishing techniques used are the pole-and-line and long-line methods. Lines are deployed and retrieved after a certain period. The fishermen then process the Yellowfin tuna directly on board: the blood is drained, the nerves and all organs are removed. Finally, the tuna is frozen at -60°C and stored. To prevent overfishing, these tuna are caught sustainably using pole-and-line and long-line methods. Tuna stocks are healthy, and catch quotas are strictly adhered to.
Nutrition & Culinary
Nutritionists have shown that deep-sea fish, such as Yellowfin tuna, are rich in Omega-3 polyunsaturated fatty acids. Omega-3 has anti-inflammatory properties and can alleviate certain allergies. When frozen, the fish requires no antibiotics or chemical additives to maintain its freshness. Freezing at -60°C kills any potential parasites, ensuring high food safety standards. After thawing, Yellowfin tuna can be used raw, making it ideal for dishes such as sushi and sashimi.
