What is Shock Fresh?
Year-Round Demand for Popular Fish
There is a high demand throughout the year for popular fish, such as turbot or tuna. However, these fish are only at their peak during a short seasonal window. Outside of their season, they are often more expensive and leaner. Jan van As sought a solution to provide popular fish species year-round, regardless of whether they are in season or not. This led to the creation of the Shock Fresh label. Shock Fresh products are frozen immediately on the boat and, upon arrival at Versvishandel Jan van As, further frozen to -60°C.
By catching, sourcing, processing, and freezing fish at -60°C during their peak season, these seasonal fish remain available year-round. As a result, Versvishandel Jan van As can consistently offer perfect quality at stable prices. Jan van As supplies both Yellowfin and Bluefin tuna as Shock Fresh products. Additionally, upon customer request, other fish species can also be shock frozen at a client-specific level. This way, customers have their own personalized Shock Fresh stock at Jan van As.
Why Shockfresh
Food Safety
Immediately after the catch, the fish is cooled as quickly as possible to -60°C. This ensures optimal quality and preserves its flavor. Additionally, this temperature effectively eliminates any potential parasites. Dutch law mandates that all raw fish must first be frozen, making this the ideal solution for anyone wanting to serve raw fish in a guaranteed food-safe manner.
Always Fresh, Stable Price, and Consistent Quality
Since the tuna undergoes the same process every time, we can offer a stable price with consistent quality. Thanks to advanced thawing techniques, the fish is indistinguishable from fresh.
